Egg, milk and meat prices have jumped in the last couple of weeks. Even the sale prices of eggs are up $1.29 per dozen, a 30% jump from two weeks ago. Sale prices of milk are up about $.10 per gallon and meat is on its' way up too. This is the unfortunate result of the bad weather in the Midwest last summer.
Apples have finally come down a bit. See Fry's price. But the Albertsons produce manager points out that even though the northwest crop is at least average, quite a bit of that crop is now moving eastward, causing shortages and higher prices here in the west. If you see a good price, better stock up, because it might not last! Next week we'll report on produce at New Frontiers and Natural Foods, which depend more on the local crops. The Farmer's Market over at Yavapai College on Saturday morning will be open through October, and this year there is more variety than ever.

Last Saturday a wonderful Chili Cook-off took place at Las Fuentes to benefit the local Alzheimer's Association. Although the ingredients might not specifically be on sale, we thought you'd like getting some of the recipes. This week we'll bring you Susan Cohen's - the 2nd place winner. And, if you like chili, you should stop everything and make this today. It's that good.
Bison Chili
2nd place winner - Susan Cohen, Hospice Compassus
3 lbs. of ground bison (available at Safeway) - Brown, drain and set aside in another dish.
Saute' in same skillet for 15 minutes:
1 large diced onion
1 large diced tomato
4 cans of Ro-Tel stewed tomatoes with chili peppers
1 can of tomato puree
3 Tablespoons of chili pepper powder
3 Tablespoons of garlic powder
2 teaspoons of salt
2 bay leaves
1 teaspoon of pepper
1 teaspoon of sugar
Combine bison in a crockpot and simmer for 1 hour. Serves 8.
Apple Sauce
4 pounds (or more) apples (a mix of at least 3 different types) Good choices are Rome, Golden Delicious, MacIntosh, Jonathon and Pink Lady (which will add an attractive pinkish color.). Ideally, a mix of sweet, tart, and aromatic is best. If antique apples are available, try Gravenstien, Sierra Beauty, Winesap, and Spitzenberg.
Cut apples into quarters; remove cores, but not peel. Each apple variety needs to be cooked separately, as they will have different cooking times. Place apple quarters in a heavy pot of a size to easily contain them. Heat to boiling, turn heat down to a low boil, cook uncovered until they are quite soft, but not disintegrating.
While cooking the first batch, prepare the second.
With a slotted spoon, remove apples to a wide bowl or dish. Let cool until they can be handled.
Using a spoon, scoop apples' flesh away from peel. Discard peel and place flesh in a large bowl.
Repeat process until all apples are cooked.
For chunky apple sauce, mash up with a potato masher. For smooth apple sauce, use a stick blender or food processor.
If you have a food mill, you can skip coring the apples, just remove the stems and blossom ends, quarter, cook and put through the mill. This is a lot quicker, and good if you have a lot of apples to process, but you can't make it chunky that way.
Serve sprinkled with cinnamon/cardamom sugar (or Splenda.) Use to top oatmeal. Add some raisins and chopped dried apricots and serve with pork chops or roast pork. Freeze, if you still have enough!
